1-STEP VEGGIE LASAGNE|
6 uncooked lasagne noodles
3 c. sliced zucchini
2 c. tomato sauce
1 onion, chopped fine
1/2 green pepper, chopped fine
1 carrot, shredded
2 cloves garlic, minced
1 1/2 tsp. oregano
1 tsp. basil
1/2 c. water
2 c. creamed cottage cheese
1/2 c. grated Parmesan cheese
3 c. grated Mozzarella cheese
In a 2 quart bowl combine tomato sauce, onion, zucchini,
green pepper, carrot, garlic, spices and water. Microwave 10
minutes on (High); stir after 5 minutes. In another large bowl
combine cheeses and egg. In a 9 x 13-inch microsafe pan layer
some sauce mixture, then 3 noodles, cheese mixture, repeat with
tomato mixture, cheese, noodles. Put remaining tomato mixture
on top. Pour 1/4 to 1/2 cup water around edges. Cover with 2
layers of plastic wrap, microwave 10 minutes on (High). Reduce
to 50% power and microwave for 20 minutes. Let stand covered
10 minutes before serving. Shake additional Mozzarella cheese
over casserole before standing time.
