TOMATO SAUCE

1 medium onion, chopped
1 medium carrot, chopped
3 Tbsp. water
5 large tomatoes (about 5 c.),
chopped
1 (6 oz.) can tomato paste
1/2 tsp. salt
1/2 to 1 tsp. sugar, if
desired
1/8 tsp. pepper

Combine onion, carrot and water in 2 quart casserole and
cover. Microwave 4 to 5 minutes (High). Stir in tomatoes,
tomato paste, salt, sugar and pepper. Microwave on (High)
uncovered 20 to 23 minutes or until thick, stirring 2 to 3
times. Process in blender. Makes about 6 cups.
Note: This sauce will not separate because the last
step is to use the blender or food processor to unify and
combine the solids. It is also more nutritious and convenient
not to peel the tomatoes since the last step will also
pulverize the skins.
