CREAM OF BROCCOLI AND CHEESE SOUP

2 c. chopped celery
1 c. finely chopped onion
1 pkg. (10 oz.) chopped
broccoli
1 c. cottage cheese
2 c. milk
1 can cream of chicken soup
1/2 tsp. salt (if desired)
1/4 tsp. pepper

Cook celery, onion and broccoli in 2 1/2-quart covered
casserole in microwave on High 6 minutes, stirring after 3
minutes. Set aside. Blend cottage cheese in blender or food
processor until very smooth. Add chicken soup and milk while
continuing to blend. Add to cooked, undrained vegetables.
Microwave on High until heated through without boiling, about 3
minutes. Add salt and pepper.
