FILLET OF FISH ALMONDINE 1 lb. whitefish (sole, haddock) 1/2 c. butter or margarine 1/2 c. slivered almonds 1/2 tsp. salt 1/4 tsp. dill weed 1/2 tsp. pepper 1 tsp. chopped parsley 1 Tbsp. lemon juice In 8-inch baking dish, place almonds and butter. Cook, uncovered, on High 5 minutes. Remove almonds and set aside. Place fish pieces in dish with butter. Turn over to coat both sides. Sprinkle with salt, pepper, dill, parsley and lemon juice. Cover with waxed paper and cook on High 4 minutes. Uncover, sprinkle with almonds and cook on High 1 minute or until fish flakes. Let stand 4 to 5 minutes before serving. Garnish with lemon slices and parsley, if desired. Sprinkle with paprika. Serves 2 to 3.
