MICROWAVED FISH

fish fillets (2 per person)
1 pkg. frozen spinach,
prepared per directions
1 zucchini
1 small onion
salt and pepper
pats of butter or margarine

On each fillet, spoon out a little cooked and drained
spinach. Add very thinly sliced zucchini and 2 or 3 thinly
sliced onions. Dot with butter or margarine. Sprinkle with
salt and pepper to taste. Cover with a second fillet. Roll
carefully to cover with Saran Wrap. Cook in microwave oven 3
minutes on High. Turn over. Cook 2 minutes on other side.
Let stand 3 minutes.
