MICROWAVE SUPPER OMELET

2 medium potatoes, peeled
1 small onion, chopped
2 Tbsp. margarine
4 eggs
1/4 c. skim milk
3/4 tsp. salt
1/8 tsp. pepper
1 large carrot, grated
1/2 c. chopped green pepper
1 medium tomato, chopped
grated cheese (optional)

Shred potatoes. Place in sieve and rinse thoroughly
with cold water and drain. Combine potatoes, grated carrots
and onion in pie plate (glass). Cover with wax paper. Micro-
wave at High 7 to 8 minutes or until potatoes are tender; stir
once.
Stir in margarine. Combine eggs, milk, salt and pepper.
Beat well. Add green pepper and tomato. Pour over potatoes.
Mix lightly to combine. Cover with wax paper. Microwave at
High 2 minutes. Stir to move cooked edges to center. Cover.
Microwave at High 2 to 3 minutes or until just about set in
center. Let stand a few minutes. Cut into wedges to serve.
Grated cheese can be added to garnish. Contains 215 calories
per serving.
