MICROWAVE PEANUT BRITTLE 1 c. sugar 1/2 c. corn syrup 1 c. peanuts 1 1/2 tsp. vanilla 1/8 tsp. salt 1 Tbsp. butter 1 tsp. baking soda Combine sugar and corn syrup; cook on Full power 6 to 7 minutes. Stir after 3 minutes. Add vanilla, salt, butter and peanuts; cook on Full power for 1 1/2 minutes or until caramel color. Stir in baking soda. Place in microwave for 15 sec- onds. Pour onto lightly greased baking sheet. Cool and break into pieces.
