MEXICAN CASSEROLE

4 to 5 flour tortillas
1 lb. ground beef
1/2 c. green diced pepper
1/2 c. diced onion
1 envelope taco seasoning mix
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1/4 c. water
1/2 tsp. chili powder
1 c. sour cream
2 eggs
1/4 tsp. pepper
2 c. crushed Doritos
2 c. shredded Monterey Jack
2 qt. casserole
1 oblong casserole

Separate and crumble ground beef into 2 quart casserole.
Add green peppers and onion. Microwave on High for 3 to 5
minutes or until meat loses its pink color. Stir and drain.
Mix in taco seasoning to sauce and tomato paste, water and
chili powder. Microwave on Medium for 10 to 15 minutes or
until thickened. Blend sour cream, eggs and pepper in small
bowl. Place 2 tortillas on bottom of oblong dish. Put half of
meat mixture and half of sour cream mix. Repeat layers with
last of meat and sour cream mixture. Sprinkle with Doritos and
cheese. Microwave on Medium for 10 to 15 minutes or until
cheese melts. Let stand 5 minutes.
