ZUCCHINI NUT LOAF

1 Tbsp. toasted wheat germ
1 1/2 c. flour
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. baking powder
1 egg
1 c. sugar
1 c. shredded zucchini
1/4 c. oil
1/4 c. milk
1/4 tsp. grated lemon peel
1/2 c. chopped walnuts
powdered sugar

Grease loaf pan and sprinkle bottom and sides with wheat
germ. In a small bowl, stir together the flour, cinnamon,
baking soda, salt, nutmeg and baking powder, set aside. In a
medium bowl, beat the egg, add sugar and zucchini and beat
well. Add oil, milk and lemon peel, mix well. Stir flour
mixture into zucchini mixture, then gently fold in nuts. Pour
batter into prepared pan. Shield corners with foil, microwave
uncovered on medium setting for 15 to 19 minutes or until done,
giving pan quarter turn every 3 minutes. Top with sifted
powdered sugar.
