PIZZA FOR ONE

1 Tbsp. cornmeal
3/4 c. pkg. biscuit mix
1/4 c. milk
1/3 c. quick pizza sauce
8 to 10 thin slices pepperoni
1/2 medium green or sweet red
pepper, sliced
1/4 c. chopped onion or sliced
pitted ripe olives
1/2 c. shredded Mozzarella
cheese

Grease a 9 x 5-inch warming dish and coat with cornmeal.
In a small mixing bowl, combine biscuit mix and milk, stir
until just mixed and pat into dish. Microwave uncovered for 3
to 4 minutes at Medium-high setting. Half turn dish after
halfway cooked. Top with remaining ingredients and microwave
for another 3 to 4 minutes at same setting.
