SCALLOPED POTATOES 3 Tbsp. butter 2 Tbsp. flour 1 tsp. salt 1/4 tsp. pepper 2 c. milk 3 1/2 to 4 c. sliced potatoes 2 Tbsp. minced onion Melt butter in microwave for 1 minute or until done in a 1 quart measuring cup. Blend in flour and seasonings. Gradu- ally stir in milk. Microwave High 8 to 10 minutes, stirring after 4 minutes. Layer half of potatoes, onions and sauce in a greased 2 quart casserole dish. Repeat layers. Cover and microwave at Medium-high for 17 to 19 minutes. Remove from oven and let stand 5 minutes before serving.
