PEANUT BRITTLE 1 c. sugar 1/2 c. white corn syrup 1 c. roasted, salted peanuts (Planter's) 1 tsp. margarine 1 tsp. vanilla 1 tsp. baking soda Stir sugar and syrup in 1 1/2-quart Corning Ware casse- role dish and microwave on High, uncovered, for 4 minutes. Stir in peanuts and microwave, uncovered, on High 3 to 5 minutes. Add margarine and vanilla. Blend well. Microwave, uncovered, 1 to 2 minutes. Add baking soda and stir gently until light and foamy. Pour onto greased cookie sheet (use margarine or Crisco, do not use Pam or the like; it will make the candy sticky on bottom). Cool and crack.
