MICROWAVE ROUX

1 c. oil
1 c. flour (all-purpose)

Mix oil and flour in a 4 cup measure. Microwave uncov-
ered on High for 5 minutes. Remove and stir. Put back for 1
minute at a time, stirring after each minute until desired
darkness is reached. (This should take about 3 minutes,
stirring after each minute.) Put in again for 30 seconds. It
should be dark enough for making Louisiana Gumbos and Stews.
The roux will be hot, so continue to stir for a few minutes.
When oil tops, roux is done. Use wooden spoon.
