MICROWAVE RICE PUDDING

3/4 c. sugar
2 Tbsp. cornstarch
1/4 tsp. salt
2 c. milk
2 egg yolks
2 c. cooked rice
1/2 c. raisins (optional)
1 Tbsp. margarine
1 tsp. vanilla
ground nutmeg

Combine sugar, cornstarch and salt in 2 quart casserole.
Gradually stir in milk. Microwave on High power for 8 minutes,
stirring every 2 minutes. Beat yolks slightly with fork; stir
in small amount of hot mixture and immediately stir into
casserole dish. Blend thoroughly. Microwave 2 minutes more,
stirring halfway. Stir in rice, raisins, margarine and vanil-
la. Let stand 10 minutes, stir gently, and spoon into dessert
dishes. Sprinkle with nutmeg.
