MINESTRONE SOUP 1/2 c. thinly sliced celery 1/2 c. thinly sliced carrots 2 cloves minced garlic 1 large potato, cut into 1/2-inch cubes 1/2 lb. green beans, cut in 1-inch pieces or use frozen green beans 1 can undrained tomatoes 1 c. thinly sliced zucchini 3 c. hot water 2 tsp. instant beef bouillon granules 1 tsp. basil 1 Tbsp. parsley flakes 1/2 c. broken spaghetti or soup noodles In 3 quart casserole, combine all ingredients. Cover. Microwave at High 25 to 35 minutes or until vegetables are tender, stirring once or twice. Note: For a tomato soup flavor, add 8 ounce can of tomato juice to ingredients.
