MARY'S CARROT CAKE|
1 1/4 c. sugar
1 c. cooking oil
1 tsp. vanilla extract
1 1/2 c. unsifted all-purpose
3/4 tsp. salt
1 1/2 tsp. baking soda
2 1/2 tsp. cinnamon
2 1/4 c. raw grated carrots
1/2 c. chopped walnuts
In large mixing bowl blend sugar, oil and vanilla. Add
eggs and beat well. In small bowl stir together flour, salt,
soda and cinnamon. Add to sugar-egg mixture and mix in. Fold
in carrots and walnuts. Pour batter into greased 12 x 8 x
Microwave at High 13 to 15 minutes, rotating dish 1/2
turn after 8 minutes. Let stand directly on heat-proof counter
or wooden board to cool. Frost with Cream Cheese Frosting.
Makes 1 (12 x 8 x 2-inch) cake.
