SPINACH CASSEROLE

1 (10 oz.) pkg. frozen chopped
spinach
1 1/2 c. cottage cheese
1 1/2 c. shredded Cheddar
cheese
2 eggs, slightly beaten
3 Tbsp. flour
1 Tbsp. dried chopped onions
1/2 tsp. salt
1/2 c. bread crumbs
2 Tbsp. melted butter

Place frozen spinach in an 8 x 8 x 2-inch microwave safe
dish. Cut package and cook in carton in microwave for 5
minutes. Remove spinach from package and drain. Combine
cooked spinach in dish with cottage cheese, Cheddar cheese,
eggs, flour, onions and salt.
Combine bread crumbs and melted butter; sprinkle evenly
over top of casserole. Cook at High power (100%) for 8 minutes
with dish on shelf in center position. Brown 6 to 8 minutes or
until light brown. Serves 4 to 6.
