2 (12 oz.) cans whole kernel
corn, mixed with red and
green peppers
1 2/3 c. milk
3 eggs, well beaten
1/3 c. onions, chopped
1/2 c. grated cheese
1 3/4 c. crushed cheese

Combine corn, milk, eggs, onion, grated cheese and 3/4
cup cheese crackers in an 8 x 8 x 2-inch microwave safe dish.
Place on center shelf of microwave. Cook at Medium (50%
power) for 15 minutes. Stir casserole. Mix 1 cup cheese
cracker crumbs with melted margarine. Sprinkle evenly over top
of casserole. Cook 14 minutes longer at medium (50% power).
Brown 10 to 13 minutes or until light brown. Recipe serves 6
to 8.
