PEANUT BRITTLE (Microwave) 2 c. sugar 1 c. light corn syrup 1/2 c. water 2 c. shelled peanuts (unsalted) 2 Tbsp. butter or margarine 2 tsp. vanilla extract 2 tsp. soda 1/2 tsp. salt Combine sugar, corn syrup and water in a 3 quart glass bowl. Cover with plastic wrap. Microwave at power level Cook for 22 1/2 to 27 minutes or until mixture forms threads when dropped in cold water or measures 300 degrees on candy thermometer. Stir 4 or 5 times while mixture is heating. Stir in all remaining ingredients, blending until smooth. Pour mixture thinly onto two buttered baking sheets. Spread with knife. Let stand until hard, about 1/2 hour. Break into pieces.
