MICROWAVE ZUCCHINI

6 c. sliced zucchini
2 Tbsp. margarine
3 medium tomatoes
1 medium onion, chopped fine
1/2 green pepper, chopped fine
1 clove garlic, minced
1 stalk celery, chopped fine
Parmesan cheese
salt to taste
pepper to taste

Place sliced zucchini in 2 quart casserole dish. Dot
with margarine. Puree tomatoes in blender. Add remaining
ingredients and pour over zucchini. Microwave on High 15 to 20
minutes or until tender. Stir twice during cooking. Sprinkle
with Parmesan cheese.
