MICROWAVE LEMON CHICKEN

4 boneless chicken breasts
2 Tbsp. butter
salt and pepper to taste
1/2 Tbsp. fresh lemon juice

Preheat a browning dish in microwave for 4 minutes. Add
1 tablespoon butter. When melted, add chicken and salt and
pepper to taste. Cook on High for 1 1/2 minutes. Turn breasts
over and cook on High for 1 1/2 minutes. Check to see if fully
cooked. If not, continue cooking in 30 second increments until
done. Remove chicken. Add lemon juice and 1 tablespoon butter
to browning dish. Mix and pour over chicken.
