MICROWAVE APPLESAUCE MUFFINS

2 tsp. lemon juice
3/4 c. milk
1/2 c. boiling water
1 1/2 c. granola with fruit
and nuts
1/2 c. applesauce
1/4 c. vegetable oil
1 egg, beaten
1 1/4 c. flour
1/2 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg

Stir lemon juice into milk, set aside. Put water in 2
quart bowl. Sprinkle granola over water, stir until moist.
Stir in milk, applesauce, oil and egg. In separate bowl blend
dry ingredients. Add dry ingredients to granola mixture. Stir
just until moistened. Keeps covered in refrigerator up to 3
weeks.
To bake, put 2 tablespoons batter in paper cups in
microwave pan. Bake on Full power for 2 1/2 to 3 minutes for 6
muffins. Wooden pick comes out clean.
