MICROWAVED STUFFED CORNISH GAME HENS

Remove neck and giblets from 2 hens. Rinse and pat dry
using paper towels. Place hens in an 8-inch square glass dish,
breast side up. Stuff hens with desired stuffing. If any
stuffing will not fit into hens, place in baking dish with
hens. Overlap skin and close opening with toothpicks. Rub
skin with a mixture of 1 teaspoon of oil and 1/2 teaspoon
bottled liquid browning sauce (such as Kitchen Bouquet);
sprinkle with paprika. Wrap end of each drumstick with a small
piece of foil. Cover hens with wax paper.
Microwave on 70% (Medium-high) power 10 minutes. Turn
each hen halfway around in dish (not upside down). Re-cover
and microwave on 70% power 10 to 12 minutes. Let stand 5
minutes before serving. Makes 2 servings (1 hen each) or 4
servings (hens cut in half).
Note: To cook one Cornish hen, microwave on 70% (Medi-
um-high) power 11 to 12 minutes, rotating dish sideway through
cooking.
