FILLETS ALMONDINE (4 Servings) 1/4 c. butter or margarine 1/4 c. slivered almonds 2 Tbsp. lemon juice 1 lb. whitefish (fresh or defrosted) 1/4 tsp. salt Place butter and almonds in 8 x 8-inch baking dish. Microwave 5 minutes on High, until almonds are golden, stirring once. Remove and set aside. Arrange fillets in baking dish with thickest portions to outside of dish, turning to coat with butter. Sprinkle with lemon juice and salt. Cover tightly with plastic wrap. Microwave 5 to 6 minutes on High or until fish flakes easily and appears opaque. Garnish with toasted almonds.
