QUICHE LORRAINE
(5 To 6 Servings)
1 (9-inch) baked pie crust
1/2 lb. bacon, cooked and
crumbled
1 c. shredded Cheddar cheese
1/3 c. finely chopped onion
1 c. light cream or evaporated
milk
3 eggs
3/4 tsp. salt
1/4 tsp. sugar
1/8 tsp. cayenne pepper

Place crumbled bacon in bottom of baked pie crust in
glass pie plate. Sprinkle cheese and onion on top; set aside.
Pour cream into 1-cup glass measure. Microwave (High) 1 to
1 1/2 minutes or until cream is hot. In small bowl, beat
eggs and seasonings; slowly blend in heated cream. Pour over
bacon, cheese and onion in pie shell. Microwave (30%) 25 to 35
minutes or until knife inserted near center comes out clean.
Let stand 5 minutes before serving.
