FRESH STRAWBERRY JAM
(Yields 2 1/2 Pints)
1 qt. fresh strawberries
3 1/2 c. sugar
2 1/2 Tbsp. powdered fruit
pectin

Place washed berries in 3-quart casserole; crush and
stir in pectin. Cover with waxed paper or plastic wrap. Cook
4 minutes (High); stir, then cook 3 to 3 1/2 minutes or until
berries begin to boil around edge of dish. Slowly stir in
sugar. Cook 3 minutes (High), stir, then cook 2 minutes or
until jam reaches a full boil. Stir and skim. Pour into
glasses or jars and seal.
