4 slices bacon, cooked
4 medium potatoes, peeled
1/4 c. chopped onion
1/4 c. water
1/2 c. mayonnaise or salad
1/3 c. sour cream
1 c. shredded Cheddar cheese
1/2 tsp. salt
dash of pepper
Crumble bacon and set aside. Slice potatoes into 1 1/2
quart casserole. Add onion and water. Cover with lid.
Microwave (High) 12 to 14 minutes, stirring halfway through
cooking time; drain. Combine remaining ingredients. Add to
potatoes; mix lightly to combine. Sprinkle bacon over top.
Microwave (High) 1 1/2 to 2 minutes to heat through.
