1/2 c. thinly sliced onion
1/3 c. chopped green pepper
1/4 c. olive oil
1 medium eggplant, peeled and
cubed (about 1 lb.)
1/2 c. tomato sauce
1 tsp. basil
1 to 2 cloves garlic, pressed
or finely chopped
1/2 tsp. oregano
1/4 tsp. grated orange peel
1/2 tsp. salt
1/8 tsp. pepper

Combine onion, green pepper and oil in a 2 quart casse-
role. Microwave, uncovered, at High level for 5 minutes
stirring twice. Add all remaining ingredients and stir to
blend. Cover. Microwave at High level for 15 to 18 minutes
(stir 3 to 4 times). Let stand, covered, 10 minutes before
serving. Makes 4 servings.
