HEARTY VEGETABLE BEEF SOUP

1/2 lb. beef chuck stew meat,
in 1/2 inch chunks
1/2 c. onion, chopped
1 clove garlic
1 Tbsp. butter or margarine
1 c. celery, thinly sliced
1 c. carrot, thinly sliced
1 c. tomatoes, chopped
1 turnip, chopped
1/4 tsp. thyme, crushed
1/4 tsp. basil, crushed
1/2 bay leaf
1/8 tsp. pepper
1 qt. hot water
1 Tbsp. beef bouillon or 3
cubes
1/2 c. alphabet soup noodles
(optional)

In 4 quart casserole place meat, onion, garlic and
butter. Cover and cook on High 3 minutes, stirring after 1 1/2
minutes. Add remaining ingredients except noodles. Cover and
cook on Medium 40 minutes, stirring after 20 minutes. Add
noodles and cook covered on Medium 20 minutes more.
