ENCHILADA CASSEROLE

Casserole:

1 pkg. tortillas
1 1/2 lb. ground meat
1 1/2 lb. Jack cheese, sliced
1 can ripe olives
grated Parmesan cheese

Sauce:
1 cube butter
4 Tbsp. flour
1 can tomato sauce
1 qt. hot water
2 tsp. garlic salt
3 heaping tsp. chili powder
dash of cayenne

Sauce: Melt butter, add flour; stir until well blended.
Add tomato sauce, water and seasonings. Cook on high for 10
minutes to bring to boil. Stir frequently, simmer for 2
minutes longer.
Casserole: Cover bottom of pan with sauce. Arrange 4
tortillas in pan. Moisten the meat with a little sauce for
easier spreading. Spread half the meat mixture over tortillas.
Lay half the cheese slices on top, then sprinkle with half the
olives and onions. Place 4 more tortillas on top and repeat
layers. Top with last 4 tortillas and cover with sauce.
Sprinkle Parmesan cheese over all and cook on High 10 minutes.
Let stand 5 minutes, then cook another 3 minutes longer. Serve
any remaining sauce, hot, on the side.
