MEXICAN FIESTA

1 lb. ground beef
1 pkg. tortilla chips
onion flakes
1 can cream of chicken soup
1 can Ro-Tel tomatoes
1 c. grated Cheddar cheese

Brown beef and onions on High for about 5 minutes.
Place tortilla chips on bottom of a large casserole dish.
Layer beef, mixture of soup and Ro-Tel, then tortillas. Make
two layers ending with chips on top. Add cheese to the top of
this. Cook uncovered to 150 degrees or about 12 minutes until cheese
melts and casserole is heated all the way through. You can use
boiled chicken or leftover turkey instead of beef in this
casserole.
