MICROWAVE WHITE SAUCE

2 Tbsp. butter or margarine
2 Tbsp. all-purpose flour
1/4 tsp. salt
1 c. milk
pinch of white pepper

Place butter in 4 cup measure. Microwave, uncovered, at
High power until butter is melted, 30 to 45 seconds. Add
flour, salt and pepper to butter; stir until smooth. Microwave
milk mixture, uncovered, at High power until sauce thickens and
coats a spoon, 6 to 8 minutes. Stir sauce after each minute
during cooking. Makes about 1 cup.
