MICROWAVE SWEET POTATO ORANGE SHELLS

3 fresh oranges
1 (18 oz.) can vacuum-packed
sweet potatoes
1/4 c. butter, softened
1/4 c. packed brown sugar
1/4 tsp. ginger

Cut oranges in half crosswise. With grapefruit knife,
carefully cut around orange pulp and remove from shell. If
desired, cut a decorative edge on each orange shell. Arrange
shells on glass serving plate and set aside. Remove membrane
from orange sections by cutting along membrane of each section.
Reserve orange sections. Mash sweet potatoes until smooth.
Beat in butter, brown sugar and ginger. Fold in orange sec-
tions. Pile mixture into orange shells; top each with a little
brown sugar. Sprinkle with cinnamon. Microwave, uncovered, 4
to 5 minutes or until heated through, turning dish once.
Serves 6.
