MICROWAVE ORANGE COCONUT RING CAKE|
1/4 c. butter
3/4 c. orange or peach
1/2 c. flaked coconut
1 pkg. Pillsbury Plus lemon
1/3 c. oil
1 c. water
Grease and sugar 12 cup fluted plastic or ceramic tube
pan. In 2 cup glass measure, microwave butter until melted.
Add marmalade and coconut and mix well. Spread evenly on
bottom of pan. In large bowl blend cake mix, eggs, oil and
water until moistened. Beat 2 minutes at highest speed. Pour
batter over marmalade mixture in pan. Rotate pan 1/2 turn
every 5 minutes. Microwave on High 4 1/2 minutes only, 12
minutes only. Cool upright in pan 10 minutes. Turn onto
serving plate. Spoon any remaining marmalade in pan on cake.
Cool completely. Makes 10-inch ring cake.
