CHICKEN SALAD PARTY SPREAD

2 chicken breast halves,
skinned
2 Tbsp. chopped onion
2 Tbsp. water
4 slices bacon
1/4 c. plus 2 Tbsp.
mayonnaise
2 Tbsp. commercial barbecue
sauce
1 Tbsp. lemon juice
1/2 tsp. pepper

Arrange chicken in a 9-inch pie plate, placing meatier
portions to outside of dish; sprinkle with onion. Pour water
over chicken. Cover with heavy-duty plastic wrap; microwave at
High 2 1/2 minutes. Give dish a half-turn and microwave at
High 2 1/2 to 3 1/2 minutes or until chicken is no longer pink
and juices run clear. Drain; remove chicken from the bone, and
finely chop meat. Place bacon on a rack in a 12 x 8 x 2-inch
baking dish; cover with paper towels. Microwave at High 3 1/2
to 4 minutes or until bacon is crisp. Drain bacon; crumble and
set aside. Combine mayonnaise and remaining ingredients in a
medium bowl. Add chicken and bacon, tossing until well mixed.
Spread on party bread or crackers. Yield: 1 1/2 cups.
