2 to 3 lb. fresh zucchini, cut
in 1/4-inch slices
1/3 c. water
1/2 tsp. salt
4 Tbsp. butter or margarine
3 Tbsp. parsley, chopped fine
Do not peel zucchini. After slicing, place in 2 quart
casserole dish. Cover and cook on High for 7 minutes or until
tender. Add remaining ingredients and stir. Heat, uncovered,
on High for 2 more minutes.
