CHEESY RICE BAKE

1 can condensed cream of
mushroom, tomato or Cheddar
cheese soup
1/3 c. milk
1 Tbsp. chopped fresh parsley
2 c. cooked rice
2 c. diced cooked beef or ham
1 c. cooked whole kernel corn
or chopped tomatoes
1 c. shredded Cheddar,
Mozzarella or Parmesan
cheese

In large bowl, combine soup, milk and parsley; stir to
blend. Stir in rice, beef (or ham), and vegetables; pour
mixture into 10 x 6-inch microwave-safe dish; cover. Micro-
wave on High for 7 to 10 minutes until heated through, stirring
once. Sprinkle with cheese. Microwave on High 2 minutes or
until cheese is melted.
