OYSTER-VEGETABLE STEW 1 c. diced potatoes 1/2 c. sliced carrots or sliced zucchini 1/4 c. chopped onion 3/4 c. chicken broth or milk 1 can condensed oyster stew 1 Tbsp. chopped fresh chives or 1/4 tsp. tarragon leaves, crushed herbed croutons or oyster crackers In 1 1/2 quart microwave-safe casserole, combine potato, vegetable, onion and liquid; cover. Microwave on High for 8 to 10 minutes until vegetables are tender, stirring once. Stir in oyster stew and chives (or tarragon leaves); cover. Microwave on High for 4 to 6 minutes until heated through, stirring once.
