CHICKEN FRICASSEE 3 lb. broiler-fryer chicken, cut up salt pepper paprika 1 can cream of chicken soup 1 c. milk Parsley Dumplings Cut each chicken breast half into halves. Arrange pieces, skin side up with thickest parts to outside edges in 12 x 7 1/2 x 2-inch baking dish. Sprinkle with salt and pepper. Sprinkle generously with paprika. Cover with waxed paper and microwave on High 10 minutes. Skim off fat if necessary. Mix soup and milk. Spoon over chicken pieces. Rotate dish 1/2 turn. Cover with waxed paper and microwave on High until thickest parts of chicken are done, 8 to 12 minutes longer. Prepare Parsley Dumplings. Drop by spoonfuls around edge of dish. Microwave uncovered on High 3 minutes; rotate dish 1/2 turn. Microwave until dumplings are no longer doughy, 3 to 4 minutes longer. Makes 6 servings. Parsley Dumplings: 2 c.
