CHICKEN SUPREME

1 1/2 c. soyameat chicken
slices, cubed
1 c. sliced mushrooms
4 to 5 slices stale bread,
crusts removed
1 (8 oz.) can sliced water
chestnuts, drained
3 eggs, beaten with 1/2 c.
milk
1/2 c. finely chopped onion
1 (4 oz.) can chopped pimiento
1 1/2 tsp. salt
1/2 c. mayonnaise, dotted on
6 slices American cheese

Saute mushrooms and onion in batter bowl. Line flat
casserole with the stale bread. Cover evenly with cubed
chicken, water chestnuts, sauteed onion and mushrooms and
pimiento. Add salt and dot on mayonnaise. Cover with eggs and
milk. Bake covered with vented plastic cover for 10 minutes on
Medium-high and turning 1/4 turn after each 5 minutes. Remove
cover and add 1 cup buttered bread crumbs. Bake 2 to 3 minutes
more. Cashews may be added to this casserole. Serves 6 to 8.
