PEACHES, BERRIES AND CREAM

2 pt. fresh or frozen
blueberries
1/3 c. sugar
3 Tbsp. all-purpose flour
1/2 tsp. ground allspice
1 tsp. lemon juice
2 peaches
Creme Friache (see recipe) or
whipped cream

Rinse frozen blueberries. In 9-inch microwavesafe
quiche dish or cake dish, combine the sugar, flour and all-
spice. Stir in the berries and lemon juice. Microcook,
uncovered, on 100% power (High) for 9 to 10 minutes or until
thickened and bubbly, stirring every 2 minutes. Peel and pit
peaches. Cut each into 6 wedges. Arrange peach wedges, pit
side down, in the blueberry mixture (peaches should not be
completely covered with blueberries). Microcook loosely
covered with wax paper for 3 to 4 minutes more or until peaches
are just hot and blueberry mixture is bubbly. Serve warm. Top
with Creme Friache or whipped cream. Makes 4 servings.
Conventional directions: Rinse frozen blueberries. In
a medium saucepan combine sugar, flour and allspice. Stir in
the berries and lemon juice; let stand 5 minutes. Cook and
stir over medium heat until thickened and bubbly. Turn mixture
into 9-inch quiche dish. Peel and pit peaches; cut each peach
into 6 wedges. Arrange peach wedges in berry mixture, pit side
down. Cover with foil. Bake in 375 degrees oven about 10 minutes or
until berry mixture is bubbly and peaches are heated through.
Serve warm. Top with Creme Friache or whipped cream.
