FRUIT TAPIOCA 3 medium peaches, peeled, sliced and pitted 2 Tbsp. butter or margarine 1/2 tsp. salt 1/4 tsp. cinnamon or nutmeg 1 Tbsp. lemon juice 1/3 c. quick-cooking tapioca 1 c. light brown sugar 2 1/4 c. water In 2 quart glass casserole, combine all ingredients. Cook, covered, with casserole lid 10 minutes or until peaches are tender, stirring occasionally. Serve warm or cold. Makes 6 servings.
