MICROWAVE PEANUT BRITTLE

1 c. sugar
1/2 c. white corn syrup
1 c. roasted salted peanuts
1 tsp. butter
1 tsp. vanilla extract
1 tsp. baking soda

In 1 1/2-quart casserole, stir together 1 cup sugar and
1/2 cup white corn syrup. Microwave on High for 4 minutes,
then stir in 1 cup roasted salted peanuts. Cook on High for 3
to 5 minutes or until light brown and add 1 teaspoon butter and
1 teaspoon vanilla extract. Microwave on High 1 to 2 minutes.
Remove from oven; add 1 teaspoon baking soda and gently stir
until foamy and light. Pour quickly onto lightly greased
cookie sheet. Let cool 1/2 to 1 hour. When cool, break into
pieces.
