OVEN FRIED CHICKEN 2 (2 1/2 lb.) broiler-fryer chicken, cut up 2 tsp. paprika 2/3 c. milk 2 c. seasoned bread crumbs (cornflake crumbs or packaged coating) Wash and pat dry chicken. Combine desired crumb coating with paprika. Coat each piece of chicken with milk then bread crumbs mixture. Place chicken in a shallow microwave dish or on turntable with larger pieces along the outside edges of the dish, smaller pieces in center. Heat uncovered on Roast (180 degrees) for 20 minutes; rearrange chicken pieces and heat on Roast for 15 minutes. Cover with foil and let stand 5 minutes, room temperature.
