PEANUT BRITTLE 1 c. sugar, granulated 1/2 c. syrup 1 c. salted peanuts 1 tsp. butter or margarine 1 tsp. vanilla flavor 1 tsp. baking soda Cook sugar and syrup in 4 cup microwavesafe container on High heat for 4 minutes. Add peanuts and cook another 3 to 5 minutes. Add butter and vanilla; cook additional 1 to 2 minutes. Remove from microwave; stir in baking soda. Spread on cookie sheet or foil. Work quickly as candy hardens very fast. Let set 1 hour. Break into pieces. Store in cool, dry container.
