CHICKEN ON SCALLOPED CORN|
1 can (16 oz.) cream style
1 c. saltine cracker crumbs,
1/2 c. milk
1/2 c. chopped green onion
1 Tbsp. flour
2 1/2 to 3 lb. broiler-fryer
chicken pieces, skin
removed, if desired
1/4 tsp. paprika
In 12 x 8-inch baking dish combine corn, 3/4 cup cracker
crumbs, milk, onion, egg and flour. Arrange chicken pieces on
top, bony side up. Microwave at High for 10 minutes. Stir
corn mixture well. Turn over and rearrange chicken pieces,
placing least done parts to outside of dish. Combine remain-
ing cracker crumbs and paprika in small bowl. Sprinkle over
chicken. Microwave 10 to 15 minutes, or until chicken is done
and corn is set. Excess fat may be drained.
