MICROWAVE PINEAPPLE UPSIDE DOWN CAKE 2 Tbsp. butter 1/2 c. brown sugar 5 slices pineapple with syrup 5 maraschino cherries 1 (18 1/2 oz.) pkg. yellow cake mix Melt butter in microwave on High for 30 seconds in an 8-inch round glass baking dish. Stir in brown sugar. Drain pineapple slices, reserving syrup. Arrange slices and cherries over brown sugar. Prepare cake mix according to package directions, substituting pineapple syrup for water. Spoon 1/2 of batter over pineapple. Use other half for another upside down cake. Cook on Medium 8 to 9 minutes, turning dish several times. Let stand 1 minute; turn upside down. Serve warm or cold.
