MICROWAVE PEANUT BRITTLE

1 c. sugar
1/2 c. water
1/2 c. light corn syrup
1 (1 lb.) can dry roasted
peanuts
1 tsp. vanilla
1 tsp. soda

Stir together sugar, water and syrup in a 2-quart
casserole. Microwave on High for 12 to 14 minutes. Stir in
nuts. Microwave on High for 4 to 6 minutes. Stir in vanilla
and microwave 1 minute. Add soda and stir until light and
foamy. Pour on a greased cookie sheet; spread 1/4-inch thick.
Cool. Break in pieces. Place in airtight container. Yields 1
pound.
