QUICK CHOCOLATE FUDGE

1 box (1 lb.) powdered sugar
1/2 c. unsweetened cocoa
1/2 c. (1/4 lb.) firm butter
or margarine
1/4 c. half and half (light
cream)
2 tsp. vanilla
3/4 c. coarsely chopped nuts

Lightly grease an 8-inch square baking dish and set
aside. In a 1-quart glass bowl, combine sugar and cocoa. Cut
butter into small pieces and dot over sugar mixture. Stir in
half and half and vanilla. Cover with wax paper. Microwave on
High for 2 minutes. With a wooden spoon, stir hot mixture
until butter melts, then beat vigorously with a spoon for 1
minute or until fudge loses some of its gloss. Stir in 1/2 cup
of the nuts. Pour fudge into prepared dish and spread it
evenly. Sprinkle with remaining 1/4 cup nuts, lightly pressing
them into fudge. Refrigerate, uncovered, for 1 or 2 hours, or
until firm. Cut into squares. Place in tins; cover and
refrigerate. Makes about 1 pound.
