CHOCOLATE POTS DE CREME

1 1/3 c. half and half
3 Tbsp. sugar
pinch of salt
1 c. chocolate chips
3 egg yolks
1 tsp. vanilla

In 4 cup measure or 1-quart mixing bowl, combine half
and half, sugar, salt and chips. Microwave at High 3 to 6
minutes or just until boiling, stirring after 2 minutes, then
every minute. Do not boil. Beat yolks and vanilla until well
blended and thickened. Gradually beat in chocolate mixture at
low speed. Strain into pot de creme cups, small wine glasses
or demitasse cups; chill thoroughly. Serve topped with
whipped cream, if desired.
